Chicken - Foil Packets

My recipe is as follows:

  • 1 to 2 pounds of boneless/skinless chicken thighs

  • 1 packet of McCormick Original Chicken seasoning

  • 6 TBSP of salted butter- melted

  • 1 pound of potatoes - 1 and a 1/2 inches in diameter - Chopped

  • Non-stick cooking spray

  • Salt and Pepper to taste

  • Green onions (optional)

  • Sour Cream (optional)

Instructions:

  • Preheat your over to 425 degrees (or grill-Medium to high heat) - Spray foil with cooking spray

  • in a bowl, mix seasoning, butter, salt and pepper

  • Poke chicken with a fork to ensure flavor

  • Divide chicken and potatoes (around the chicken) evenly amongst foil packets with 1 chicken thigh and a handful of the potatoes

  • Season chicken with salt and pepper first, then add butter mixture to chicken and potatoes

  • Fold sides of foil over the chicken and potatoes to form a “packet”

  • Bake for 45-60 minutes or grill for 30-45 minutes.

  • Garnish with green onions or a dollop of sour cream.
